Coconut Kiwi Chicken

Ingredients:

1poundboneless chicken breast, sliced for stirfry
1/2mediumonion, thinly sliced
1/2cupcashews
1/2cupshredded coconut
1wholekiwi fruit, sliced

For the marinate:

1/4cupsoy sauce
1/4cupdry white wine
2tablespoonshoney
1tablespoonlime juice
1tablespooncorn starch
1teaspoonpowdered ginger

Method:

Marinate chicken 20 to 30 minutes. Drain chicken and save marinate.
Heat 1 tablespoon cooking oil on medium high heat, add chicken and stirfry 3 to 4 minutes.
Add onion, stirfry another minute.
Add marinate, cook and stir until sauce thickens.
Add cashews and coconut, heat through.
Garnish with kiwi slices.
