Coconut Kiwi Chicken |
Ingredients:

1 | pound | boneless chicken breast, sliced for stirfry |
1/2 | medium | onion, thinly sliced |
1/2 | cup | cashews |
1/2 | cup | shredded coconut |
1 | whole | kiwi fruit, sliced |
For the marinate: |
1/4 | cup | soy sauce |
1/4 | cup | dry white wine |
2 | tablespoons | honey |
1 | tablespoon | lime juice |
1 | tablespoon | corn starch |
1 | teaspoon | powdered ginger |

Method: |
Marinate chicken 20 to 30 minutes. Drain chicken and save marinate. |
Heat 1 tablespoon cooking oil on medium high heat, add chicken and stirfry 3 to 4 minutes. |
Add onion, stirfry another minute. |
Add marinate, cook and stir until sauce thickens. |
Add cashews and coconut, heat through. |
Garnish with kiwi slices. |
